Tasting Notes

아로마 |문 밖으로 나온 꽃다발은 카베르네를 외치며, 樟腦, 아니스, 사랑, 제비꽃, 이끼, 연기, 따뜻한 나무껍질 및 신선한 향이 납니다.

구개 |입에 넣는 순간 과일의 풍미가 입안을 감싸고, 순수하고 육즙이 풍부한 과일이 입안을 따라 흘러내리며 입안에서 사랑스러운 부드러움을 선사합니다.

부드럽고 강렬한 맛입니다. 후반부로 갈수록 타닌이 변화하며 더욱 풍미롭고 톡 쏘는 맛으로 변하고, 타닌이 지배하며 매우 깔끔하고 강렬한 여운을 남깁니다. 전반적으로 맛있고 마시기 조금은 수월한 편이며, 가장자리가 딱딱하지 않고, 과일의 풍부한 핵심 풍미가 돋보입니다.

The Growing Season

The 2021 Barossa Valley growing season was exceptional, with nature delivering balance at every stage. Generous rain from August through October replenished soil moisture, while mild, even conditions in November and December supported strong shoot growth and trouble-free flowering. Summer remained remarkably moderate, with only one day above 40°C. A perfectly timed rain in late February refreshed the vines and sustained a long, unhurried ripening period. Shiraz berries remained small to moderate, building concentrated flavour while retaining freshness, acidity and fine tannin. Harvest progressed steadily through March and into April, producing beautifully balanced, expressive fruit.

Vinification

Winemaking: A small parcel from our Coach House vineyard that was crushed and de-stemmed into open top tanks, fermented on skins for 14 days and pressed once dry. All free run juice and pressings were combined in tank and then racked off gross lees into barrel to go through malolatic fermantation. The wine was bottled with minimum fining and no filtration.

Maturation | 18 months in 20% new French oak hogs heads. 3 barrels produced, bottled in late 2023.

"The 2021 Aphrodite Cabernet Sauvignon hails from the benevolent 2021 season, and aromatically it leads with cassis, cocoa, pomegranate, shaved coconut and sweet roasted game. In the mouth, the wine shows some green aspects—though the final alcohol would not suggest this—and the tannins show a chewiness/tackiness that drives this point home. The wine is balanced, though, and it is powerful too. It feels as if it will age tremendously well. 14.6% alcohol, sealed under Diam." Drink Date: 2026 - 2041
