Tasting Notes

COLOUR | Rich ruby red to dark purple.

AROMA | The nose screams Cabernet Sauvignon, with notes aniseed, bay leaf, fresh tobacco, incense, nutmeg and ginger.

PALATE | The palates is thick and oozy, coating every corner of your tongue. The creamy and delicious tannins take over along the palate and leave you with a very soft and succulent texture. This rolls very nicely and the tannin are full of a stony minerality. I love this, the wines difference and quirkiness from having a large percentage of Petit Verdot. Which is a varietial that does exceedingly well growing on the floor of McLaren Vale, down there it takes a long time to ripen and is always one of the last blocks we pick. But every year it makes a deep, concentrated and personality driven wine. All up this is such a good Cabernet based wine, it develops slowly with aeration in a decanter and just need a cold night and a warm roast. This wine will win over many hearts.

The Growing Season

The 2022 season began with promising rainfall in South Australia, replenishing soils for a strong start. However, severe weather events—including frost and a devastating hailstorm—caused major fruit loss in the Barossa Valley’s Holy Grail vineyard. Despite setbacks, unaffected northern vineyards performed well. Mild summer conditions aided vine growth, and a late hailstorm had minimal impact thanks to mature canopies. McLaren Vale fared better, and Clare Valley excelled due to its slower ripening. Although yields were reduced, the vintage delivered wines with strong aromatics, balanced acidity, and vibrant flavours—particularly in Shiraz, which stood out in quality.

Vinification

WINEMAKING | One parcel of premium fruit was de-stemmed and fermented in an open top fermenter, with regular pump overs (two daily over peak fermentation) to extract colour, flavour and tannins. Left ‘on skins’ for 14 days, it was then drained and pressed to tank, then racked to barrel for oak maturation.

MATURATION | 18 months in French oak hogsheads with 15-20% new oak.
