Single Vineyard Shiraz

The pinnacle of our wine production, the Holy Grail is our estate vineyard situated along the palm tree lined ‘Avenue of Hopes & Dreams’ in the sub-region of Seppeltsfield in the Barossa Valley.

Perhaps one of our proudest releases, the Holy Grail Shiraz is an intensely aromatic wine with an elegance and length on the palate that is truly captivating. Its name is inspired by the Monty Python movie and our quest to find the perfect vineyard site.

The first part of this site was purchased in 2008 and included 52 acres of vacant land. The vision was to wait until resources permitted and plant this area of land as specifically as possible. Just before the 2015 vintage, a further 37 acres of land were purchased, which included 16 acres of established shiraz vines. This established block produced 27 tonnes in its first 2015 vintage, the Shiraz sourced was later barrel classified by Michael & our winemaking team into Ares, Holy Grail, and a few barrels to Bella’s Garden.

CULTURAL METHOD | Cane pruned over winter, straw mulch, and compost. Vertical shoot position trellising. Crop thinned to 3.5kg to 4kg per vine

Scores & Reviews

From a single vineyard in the Seppeltsfield sub-region of the Barossa, this is under diam. A vibrant purple hue here, this is still tight and restrained, but what a future it offers. We have aromas of black fruits, mocha, axle grease, cloves, liquorice, and dark chocolate. This is still very young and would benefit from a further five or six years in the cellar, before drinking it over the next 10 to 15 years. The palate sees the flavours of chocolate cake emerging. There is oak but it is well integrated. A supple structure with silky tannins, there is very serious length. Seamlessly crafted, this is immaculately balanced. Put simply, it is really good. Winemaking

FIRST VINTAGE | 2015
AVERAGE PRODUCTION | 6 Barrels

VINIFICATION | Several small parcels from the Holy Grail vineyard were de-stemmed into 5T stainless steel. Gently pumped over 2-3 times daily, these parcels were pressed after an average time on skins of 10 days. All free run and pressings were combined in tank and was then racked off to barrel gross lees into barrel.to go through malolatic fermantation. The wine was bottled with minimum fining and no filtration.

MATURATION | Aged for 18 months in 1-4 year old French oak barrels with up to 50% new oak. Always bottled in November the following vintage.
