Ares Shiraz
COLOUR | This years Ares is black on black in colour.
AROMA | The immediate bouquet throws you roasted meat, pain grillé, dried herbs, both blue and black berries, sage, warm earth and tea leaf.
PALATE | The palate is silky and soft. It caresses your tongue and then rolls straight to the late palate. This pull the magic act of being a big wine in a small wine's body: It creeps up on you slowly and effortlessly.
Its Barossa Shiraz at it best. This wine has a very long life ahead of it and it will age effortlessly for 25 year plus. Sit back, pull the cork and enjoy the ride, you will not be disappointed.

Aphrodite Cabernet Sauvignon
COLOUR | A wonderful stream of dark purple flows into the glass, this is a straight up a WOW+.
AROMA | Notes of cassis, bright red berries, western red cedar, lavender, liquorice, crushed blackcurrants.
PALATE | The palate is huge in texture and has layer after layer of concentrated fruits. This is a full bodied and robust wine with a lovely core of energy. Currently this is wound up pretty tight but will unfurl over many years.
In the end I am met with a lot of pleasure from this bottling and
I like and respect is shyness as a young wine and feel that it has the persistence and clarity to make very old bones. This is a gob smacking ride that is best decanted and enjoyed with a hard cheese and good friends.

Aerope Grenache
COLOUR | Deep, concentrated purple.
AROMA | A warm and interesting aromatic profile hits you, glazed plums, tar, liquorice, honey, warm oil, creosote, dark chocolate, plum conserve, fresh mint and hand cut leather
start the aromatic profile.
PALATE |The palate starts out thick and luscious but finishes surprisingly light on its feet. This is at the extreme of the powerband but it holds its shape throughout admiralty. The purity here is quite remarkable as this is the essence of Grenache. This flavour profile is deep with very dark fruits with loads of persistence.

Adrestia Semillon Sauvignon Blanc
COLOUR | Brilliant, light straw.
AROMA | Reserved aromatics of melon, pear, cinnamon, damp cedar, rosewater and nectarine.
PALATE | The palate is very light on its feet, a nice entry and mouthfeel that shows very energetic and mouth-watering fruit. This has a Bickford’s lime cordial edge, that stays focused and vibrant. The secret to this wine is always the sneaky acid profile; the fruits its around but the main act is the clean, fresh, reverberating chalky and textured acid profile.
This wine shows a leanness that is reminiscent of our original bottling in 2012. This will age very well for a very long time. I personally love this style and am surprised that its rarely seen in Australia. It shows how great cool climate Semillon can be with a careful hand on élevage.
