Shiraz is at the heart of the Two Hands story and our vineyard selections give us access to some of the greatest parcels of Shiraz grapes in the country. Each year, every one of the 1,500 barrels is tasted in the search for the very finest cuvée to represent Ares, the pinnacle of our Shiraz production.

Tasting Notes

COLOUR | This year Ares is black on black in colour.

AROMA | The immediate bouquet throws you roasted meat, pain grillé, dried herbs, both blue and black berries, sage, warm earth and tea leaf.

PALATE | "The palate is silky and soft. It caresses your tongue and then rolls straight to the late palate. This pull the magic act of being a big wine in a small wine's body: It creeps up on you slowly and effortlessly, it rolls and and rolls along and the tannins never really seem to dissolve or stop; pure silk is the best way to describe it. In the end you're left searching for the acidity, fruit and tannins as they are all so welded together. Nothing sticks out in this wine, its Barossa Shiraz at it best. This wine has a very long life ahead of it and it will age effortlessly for 25 year plus. Sit back, pull the cork and enjoy the ride, you will not be disappointed."- MT

The Growing Season

The 2018 vintage will long be remembered as one of the Barossa’s modern greats. A cool, mild spring set the foundation with even flowering and balanced fruit set, before a warm, dry summer carried the region into harvest with pristine fruit and remarkable concentration. Yields were slightly below average, but berry condition was exceptional, tiny, thick-skinned berries packed with colour, flavour and natural power.

Vinification

WINEMAKING | De-stemmed, crushed and fermented in five tonne open top fermenters, with regular pump overs (up to three daily over peak fermentation) to extract colour and tannin. Following 10-20 days of skin contact maceration the free run was drained to tank with the skins then pressed. Both the free run and pressings are blended to tank and then racked to oak after 24 hours. Malolactic fermentation takes place in barrel. Minimal fining and non-filtered.

MATURATION | 25 months maturation with 20% new French oak. The remainder in one tofour year old French oak.

CELLAR POTENTIAL | If cellared well, 20+ years.
