When Adrestia was first introduced, it took the form of a Semillon Sauvignon Blanc blend, chosen for its freshness, precision and vibrant energy. As the Flagship Series has evolved, so too has our vision for Adrestia.

The name Adrestia represents balance, restraint and harmony, qualities we now believe are expressed more completely through exceptional Chardonnay. With its ability to combine richness with elegance, power with finesse, and immediate appeal with remarkable longevity, Chardonnay embodies the very essence of the goddess it is named after.

This evolution is not simply a change of variety, but a refinement of purpose. As with every wine in our Flagship Series, we continually challenge ourselves to produce the finest possible expression of its style. Today, Adrestia Chardonnay sits proudly alongside Ares Shiraz, Aphrodite Cabernet Sauvignon and Aerope Grenache as one of the pinnacle wines of the Two Hands portfolio, reflecting our unwavering commitment to quality without compromise.

Tasting Notes

Colour | Light golden straw in colour

Aroma | Striking aromas of peach, lilies, pear, buttered popcorn

Palate | The palate is beautifully balanced with a seamless energy that builds, revealing excellent depth. Flavours flow effortlessly across the mouth, rich and round. It has a smooth, full-bodied profile with a round, viscous mid-palate and a finish marked by phenolics that linger. Over time, the wine opens up, showcasing flavours of white peach, Greek yogurt, apricot, rockmelon, dried apple, hazelnut, and elderflower. The texture and mouthfeel become more pronounced, and the mineral-driven finish adds a further layer of complexity. This wine will continue to evolve with cellaring and will benefit from time in the bottle. With more aeration, it reveals even more depth and character. Perfectly suited to pair with grilled seafood, cured Kingfish, or soft cheese, promising to be a fascinating addition to the table.

The Growing Season

The 2021 Adelaide Hills growing season delivered ideal conditions for Chardonnay. Excellent rainfall from August through October replenished soil moisture and supported healthy, even vine growth. Mild temperatures during November and December encouraged successful flowering and balanced canopies, while the summer remained remarkably moderate, with only one day above 40°C. A timely rainfall event in late February refreshed the vines and extended the ripening period. This slow, measured development allowed Chardonnay grapes to retain bright natural acidity while building flavour, texture and aromatic complexity. Harvest produced pristine, beautifully balanced fruit with freshness, precision and the refined character of the Adelaide Hills.

Vinification

Winemaking | All free run juice and pressings were combined into barrel to go through fermantation, 100% malolatic fermentation with 9 months of batonnage.

Maturation | 2 barrels, 9 months in 50% new lightly toasted French oak hogs heads. Bottled February 2022
