We were always taught that Cabernet Sauvignon was a classical, structured and well mannered wine, but in our wonderful McLaren Vale Mediterranean climate we make it rich, brooding and powerful, underpinned by boundless energy. We call it our Sexy Beast, inspired by the cult classic movie starring Sir Ben Kingsley.

"McLaren Vale cabernet is an outlier. The semi-arid maritime region boasts a distinct Mediterranean climate out of synch, at least supposedly, with cab's maturation patterns. And yet there is always a je ne sais quoi freshness amidst the inky warmth. There are inevitably strong varietal reference points from the black currant, spearmint and sage. A warmer black olive and salt bush note, too, rears amidst it all, but the result is satisfying, rich and nourishing, at its best. This is no exception." - Ned Goodwin MW - 18 June 2021

Tasting Notes

COLOUR | Mid red in a crimson core.

AROMA | Notes of fresh earth greet the nose. Aromas of balsam, dried juniper, bay leaf and red current. Background notes of Eucalypt and mint leaf add depth and layer

PALATE | Fresh and buoyant with a medium to full bodied palate. Sweet fruited entry of red current, dried juniper, baked plum leads to a mid palate which turns savoury and tight. The tannin profile has accents of fresh turned earth and fresh cedar. The finish is long and harmonious with complimentary notes of bay leaf, balsam and dried rosemary. All these combined to provide a palate that is long with lovely complex details and layers. An interesting wine that is both varietal and regional.

The Growing Season

The 2017 season in McLaren Vale delivered one of the coolest, longest ripening periods in recent memory, resulting in Cabernet of exceptional purity and balance. A wet winter replenished soil moisture, followed by a mild spring that encouraged steady canopy growth and excellent fruit set. The cool conditions continued through summer, extending hang time and allowing flavours to develop slowly without pushing sugars too high. The result is a Cabernet style that marries McLaren Vale’s signature dark berry plushness with an elegant line of acidity and finely knit tannins. Expect notes of blackcurrant, bay leaf, graphite and warm olive, framed by a freshness not always seen in the region. A standout, age-worthy vintage that highlights the Vale’s ability to deliver both power and poise.

Vinification

WINEMAKING | The many parcels making up this wine were crushed into and fermented in open top vessels, with regular pump overs (three daily over peak fermentation) to extract colour, flavour and tannins. Average time ‘on skins’ was 14 days. The batches were then drained and pressed to tank and then racked to barrel for oak maturation.

MATURATION | 10% new Taransaud French oak hogsheads. Remainder in one to seven year old French oak hogsheads.
