For those who quietly squirrel away Riesling and wait for the magic to happen, this is your moment. Our 2016 The Wolf Riesling from Clare is being released from the museum just in time for its 10 year anniversary in the cellar and is sitting in the optimal drinking window. Complex, golden and utterly delicious!

Sourced from the eastern slope of a 67 year old dry-grown vineyard in Watervale, central Clare Valley.

Tasting Notes

COLOUR | Pale straw

AROMA | Notes of kaffir lime, lemon blossom, and talc.

PALATE | Bright, breezy and fresh through the entry, with notes of fresh lime juice, blossom and slate like minerality. Taut mouth-watering acidity fans out through a lovely, intense and concentratedmid-palate with subtle creamy lees influenced textured. This wine tightens again through to a long mineral finish, complimented with interesting hints of grapefruit.

The Growing Season

The 2016 season in the Clare Valley was marked by an early start and wonderfully even ripening. A warm, dry spring encouraged healthy shoot growth and an excellent, balanced fruit-set across the valley. With lower than average rainfall through winter and early spring, the vines carried modest canopies, allowing sunlight to penetrate and build those classic Clare citrus–lime aromatics from the outset.

Summer arrived early and warm, pushing véraison forward and bringing harvest dates ahead of schedule by nearly two weeks. Crucially, the region was spared any severe heat spikes, allowing acidity to remain bright and natural as flavours concentrated. Cool nights through February helped retain freshness and delicate floral lift.

The resulting fruit came into the winery pristine, flavour packed, and beautifully structured, hallmark traits of Clare Riesling in a standout, age worthy year.

Vinification

WINEMAKING | After a slow yet even ripening period, the fruit was handpicked with great flavour and amazing natural acidity and low pH. The fruit was gently pressed and only the free run was fermented in stainless steel. Left on fine lees for 5 months to build texture and weight. This wines was then lightly fined, filtered and bottled.

MATURATION | 6 months in stainless steel, including 5 months on fine lees.
