Two Hands Adrestia Semillon Sauvignon Blanc is part of our Flagship Series, a collection inspired by the myths and legends of ancient Greece. Headed by Ares, our Flagship Shiraz, and Aphrodite, our Cabernet Sauvignon, the range also includes Adrestia, daughter of Ares and Aphrodite. Known as the goddess of equilibrium and balance, Adrestia is a fitting name for this refined Semillon Sauvignon Blanc blend.

This is a wine built for patience, with the structure and detail to reward careful cellaring. With time in bottle, Adrestia slowly comes together, revealing greater harmony, texture and mineral drive. Given aeration, the bouquet opens to lavender, rose water, citrus and subtle herbal notes, while the palate gains depth, shape and a fine, persistent line.

Elegant, layered and composed, Adrestia is a distinctive Australian white wine suited to the table, especially with grilled seafood, cured kingfish or soft goat’s cheese and good company.

Tasting Notes

COLOUR | Deep straw to light gold in colour.

AROMA | Striking aromas of cashew, pear, quince, melon, apple blossom followed by white flowers, mint and chalk.

PALATE | The palate is very well balanced with a seamless energy, that builds to display excellent depth, here the flavours flow across the palate and there is a late twist as the wine becomes more saline and puckering. This is such an interesting and thought-provoking white wine, as its taut and lean on one hand but then seamless, soft and pure on the other.

This wine requires cellaring and will slowly come together as it has more time in the bottle. Given greater aeration, the bouquet shows more lavender and rose water, and the texture and mouthfeel become more apparent, as does the mineral lead late palate. A wine that will work perfectly at the table with grilled seafood, cured Kingfish or soft goats cheese.

The Growing Season

The 2020 vintage faced severe drought, with the Barossa Valley experiencing its driest winter since 1912. Despite low yields, innovative water-saving measures, including Sap Flow monitoring, helped manage resources. A hot January was followed by ideal ripening conditions in February and March. Picking was challenging due to variability across vineyards, requiring close monitoring. The Holy Grail vineyard delivered 132 tonnes of high-quality fruit, and improvements in winemaking processes under new Chief Winemaker Richard Langford led to excellent juice quality. Though yields were down over 50%, 2020 is remembered as one of the best vintages in terms of wine quality.

Vinification

Semillon (95%) / Sauvignon Blanc (5%)

Fruit was hand-picked in the early morning to preserve freshness and gently pressed. The free-run juice was settled overnight at cool temperatures before being racked off solids and transferred to oak for fermentation. Fermentation occurred in French oak hogsheads to introduce subtle texture while allowing varietal purity to shine. The very small Sauvignon Blanc component was added to the Semillon to add a lifted aromatic edge and fine acid line. No fining was undertaken; the wine was minimally filtered prior to bottling to preserve natural texture and character.
