Winemaking: Hand picked fruit, de-stemmed, not crushed, 15% whole bunch, cold soaked in concrete fermenter, natural fermentation, punched down, 14 days on skins, light pressings.
Maturation: 500 litre Frech oak and stainless steel puncheons for 9 months
